Since I’m currently traveling around the Southwest and Texas, I’ve got Mexican food on the brain. But I’m finding it especially hard to find delicious Mexican meals that have any nutritional value at all. Well they have some, for the fact that they are food and they exist. But eating one will make you feel heavy and gross. So I thought I’d provide a little cannon of work that will change that for us all. These are some of my favorite blogs, and some of the best looking and healthiest versions of Mexican food around. So let’s do it to it…

Y’all. YALL. YALL. (I’m yelling can you tell???) I actually had the honor of putting these boats of deliciousness into my mouth as made by Beard & Bonnet herself. WOWZA the grilled avocado has such creamy and smoky flavor I could almost just eat that. But then you tempt me with a good time by adding some healthy street corn concoction in the middle, and YALL I’M GONNA PASS OUT this was so delicious. I’ve heard of using jackfruit or mushrooms in tacos to resemble meat, but never hearts of palm! And I LOVE THOSE. And they are so easy to buy and make. So to me this recipe is the ultimate win. Okay y’all. I ate some real queso today, and it was freaking delicious. BUT after like 5 bites (scoops?) I was totally full and icky feeling. So I thought it might be nice to have a delicious alternative for those queso cravings. (Because we all know they happen to the best of us.) Okay. Yes, I know that salsa isn’t a meal. But neither is queso and you didn’t argue with me there. This is a super easy, and protein-packed way to eat tacos without heavy meat. It’s flavorful, and delicious, but won’t make you say, “UGHHH I’m so full. Why did I do that to myself?” That is unless you eat 47 of these. (Don’t attempt that at home.)
