5 Minute Chickpea Salad Wraps
- 4-6 FlatOut Original Wraps
- 2-3 cups spinach
Chickpea Salad Ingredients
- 1 can chickpeas, drained and rinsed
- 1/2 cup vegan mayo
- 1/2 cup celery, sliced
- 1/2 cup grapes, halved
- 1/2 cup walnuts, chopped
- 1/3 cup sweet onions, diced
- 1 tablespoon hemp seeds (optional)
- 1 tablespoon lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Pat your chickpeas dry, making sure no excess moisture remains from washing them.
Combine all chickpea salad ingredients in a large bowl, and mix until everything is well combined.
Lay a FlatOut Wrap flat, and layer in about 1/2 cup of spinach and 1 cup of chickpea salad.
Do this for all wraps.
Lunch is pretty much my least favorite meal of the day. Somehow I ALWAYS manage to run out of ideas of what to eat, and I end up standing in front of my fridge just staring at things. And then 9 out of 10 times I just settle for avocado toast. Honestly, it’s just super frustrating. I surmise that lunch is a general struggle for people across the board, especially those with desk jobs. So I set out to make a lunch that is super quick, super delicious, and just an all around must-have. Out pops this chickpea salad idea, which basically is just a healthier version of chicken salad. And honestly, I’m so excited to eat this for lunch every day this week!
The chickpea salad takes 5 minutes, start to finish. And you can eat it by itself, on a bed of lettuce, or my favorite way – in a FlatOut Wrap! FlatOut has been a longtime sponsor of Brewing Happiness, and I only grow to love them more and more. As a general rule of thumb, I tend to go for wraps over sandwiches. I just like having less bread and more stuff. But sometimes wraps aren’t so durable. However, FlatOut makes some amazingly durable wraps, that have the perfect soft, stretchy consistency. They are very honestly my favorite wraps. And the great part is that you can find them at almost any grocery store! (Check the deli section, if you don’t find them in the bread isle.) They make lunch SO SO easy, and I promise you’ll love ’em. Especially with this chickpea salad stuffed inside!
I know this recipe is stupid simple, but I hope that it provides you with something new. A fresh perspective. A new idea. A go-to lunch. I hope it makes lunch time easier and more exciting. I know I’m already excited for tomorrow’s lunch, which pretty much never happens. So here’s hoping the same goes for you! MUWAH.
