5 Minute Chickpea Salad Wraps
- 4-6 FlatOut Original Wraps
- 2-3 cups spinach
Chickpea Salad Ingredients
- 1 can chickpeas, drained and rinsed
- 1/2 cup vegan mayo
- 1/2 cup celery, sliced
- 1/2 cup grapes, halved
- 1/2 cup walnuts, chopped
- 1/3 cup sweet onions, diced
- 1 tablespoon hemp seeds (optional)
- 1 tablespoon lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- Pat your chickpeas dry, making sure no excess moisture remains from washing them.
- Combine all chickpea salad ingredients in a large bowl, and mix until everything is well combined.
- Lay a FlatOut Wrap flat, and layer in about 1/2 cup of spinach and 1 cup of chickpea salad.
- Do this for all wraps.
- EAT UP!
Lunch is pretty much my least favorite meal of the day. Somehow I ALWAYS manage to run out of ideas of what to eat, and I end up standing in front of my fridge just staring at things. And then 9 out of 10 times I just settle for avocado toast. Honestly, it’s just super frustrating. I surmise that lunch is a general struggle for people across the board, especially those with desk jobs. So I set out to make a lunch that is super quick, super delicious, and just an all around must-have. Out pops this chickpea salad idea, which basically is just a healthier version of chicken salad. And honestly, I’m so excited to eat this for lunch every day this week!
The chickpea salad takes 5 minutes, start to finish. And you can eat it by itself, on a bed of lettuce, or my favorite way – in a FlatOut Wrap!
