Blueberry Cucumber Detox Salsa
- 1 heaping cup of yellow or heirloom tomatoes, diced
- 1 cup blueberries
- 1 cup cucumber, diced
- 1/4 cup sweet onion, diced
- 1 jalapeño, seeded and diced
- 1/8 cup cilantro, diced
- 1 garlic clove, minced
- 1 lime, juiced
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- Chop all veggies & transfer to a bowl.
- Season with salt 'n pepper, and juice with lime juice.
- Mix ingredients gently.
- Serve with chips.
Sunday is SUPER BOWL SUNDAY. And I know it’s a tempting day filled with greasy foods, 30 layer bean dip, beer, beer, and boys in jerseys. And although all of that sounds pretty delicious… it’s nice to have a lighter option around so that you don’t have to sacrifice on flavor while eating healthier. So take a deep breath, this will make it easy-peasy to resist temptation. PLUS this salsa is very simple and VERY cheap. Making everyone happy all football game long.

Yes, it has fruit in it and no red tomatoes, but I promise it still tastes like salsa. It is the right combo of sweet and savory, spicy and light.
