Don’t ever let anyone tell you you’re too old to eat nuggets.

Cajun Tofu Nuggets
Ingredients
- 1 package extra firm tofu
- 1/2 cup all-purpose flour (sub gluten free all purpose flour)
- 1 teaspoon nutritional yeast
- 1 tablespoon cajun spice
- 7 tablespoons water
- 2 cups cornflakes
- 1 cup grapeseed oil (sub vegetable or olive oil)
Chipotle Mayo Ingredients
- 1/2 cup vegan mayo (sub greek yogurt)
- 1/4 cup Ketchup
- 1-2 tablespoons Sriracha (sub garlic chili sauce)
Health-ified Honey Mustard Ingredients
- 1/2 cup vegan mayo (sub greek yogurt)
- 2 tablespoons stone ground mustard
- 1/8 cup honey (sub coconut nectar)
Instructions

In a plastic bag or in a bowl, crush up all of the corn flakes, until they are in nearly uniform small flakes. Then put them in a large bowl and set aside.

Take the tofu and cut it up into nugget-sized rectangles. (Whatever that means to you!) Set aside

Mix all of the batter ingredients (except the cornflakes) in separate a bowl until it becomes thick and sticky.

Take one tofu rectangle and roll it in your cajun spiced batter until it's well covered, then roll it around in cornflakes - applying soft pressure to make them stick. Do this for all nuggets.

Heat the grapeseed oil over medium-high heat.

Throw your nuggets into the oil, letting them cook for 20-40 seconds on each side.

Place the nuggets on a paper towel when done to let the oil drain. Do this until you are out of tofu.

Then mix together your Chipotle "Mayo" ingredients and your Health-ified Honey Mustard ingredients in two small bowls. Dip your nuggets in the sauces and EAT UP.

*If you can't find extra firm or high protein tofu, you can use firm tofu. You will just have to pack it together to get it to hold shape.
There is no reason ever to give up finger foods once you hit “adulthood.” Cause, let’s be real, what does it even mean to call ourselves adults? (Yeah, that was deep.) Anyway, all I’m saying is that there never needs to be an excuse or occasion for eating nuggets, especially when they are as delicious as these. And I do mean FREAKING DELICIOUS.
I am going to go ahead and forewarn you that you will get MESSY in the process of making these. I mean real finger lickin’ messy. So go ahead and embrace that. It’s all you can do. And if you don’t embrace it you will end up hating yourself. I will also forewarn you that these are addictive and amazing. And you might eat so many that you will end up in a straight up food coma. haha. But it’s so worth it.
So here we have our basic list of ingredients. I’ll break it down for you…
- TOFU. Use extra firm, high protein, or firm. Just don’t use sprouted. That won’t hold together well.
- Flour. These are easily made gluten free by using gluten-free all purpose flour! (It works just as well.)
- Grapeseed Oil. I used this as opposed to others, because it has a high smoking point and therefore is good for frying things, but it’s also totally kosher to use vegetable or olive oil.
- Corn Flakes. You can even use the fancy kind that have multiple kinds of grains in them. WOAH, that’s like super healthy. haha.
- Cajun Spice. Use Tony’s Cajun Spice. (I’m not sponsored. I’m just obsessed.)
You’ve got one spicy sauce and one sweet sauce, so you get to choose which is the best combo for these Cajun Tofu Nuggets! I have my favorite, but I wanna know what yours is! These tofu nuggets are basically everything. I wish I had had them when I was a kid. But hey, who say’s I can’t still be a kid now? …Oh society. And the government. Okay well… a girl can still pretend! So you can eat them with your kids or you can eat them like a kid, or you can just eat them. No matter what these are begging to be eaten.
