I’ve been feeling very “snack-y” lately. I’ve got the munchies basically always. And although that’s not too far from normal, it’s definitely a bit exaggerated right now. So in order to combat the potential unhealthy route in snacking, I came up with these babies. Which both satisfies my snack cravings, and gives me enough fiber and carbs to keep me full. Plus, they are SUPER easy to make. So it’s a great thing to make, and take with you to work or class or the gym. Cause we all need those grab ‘n go snacks that aren’t (a.) overly filling like eating nuts, or (b.) aren’t a bag of potato chips or something like that. The middle ground is hard to find (I know.) But don’t worry. I’ve got your back on this one.
The consistency is crunchy and crispy – so the texture can combat a craving for those salty chips or crackers. BUT it’s packed full of fiber and iron. So you don’t have to feel guilty, you are fueling your body well! Plus, when you find out how simple it is, you won’t be able to resist trying it.
BOOM. DONZO. Then you have yourself the yummiest snack that probably looks like this…

Curry Roasted Edamame
- 2 cups shelled edamame
- 1 tablespoon grapeseed or olive oil
- 1 tablespoon curry powder
- 1/2 teaspoon cinnamon
- 1/8 teaspoon cayenne
- 1/8 teaspoon salt
- 1/8 teaspoon pepper
- Preheat the oven to 350.
- In a bowl mix the edamame with the oil and spices.
- Lay the edamame on a baking sheet.
- Bake for 45 minutes.
- EAT 'EM.
