EAT UP.
For a food blogger, I have some weird food tendencies or preferences. What I mean by that is that there are certain foods that give me a lot of anxiety to eat. No, I don’t mean bagels and pizza because of the calories (although there was a time in my life that would have been true.) I mean foods like tacos and popsicles and ice cream and soup.
You might be thinking, Haley – those sound like some weird foods to give you anxiety. What the heck is your problem? Well, I’ll tell you. It has to do with food that either falls apart, melts, or goes cold while you’re eating it. Tacos, for example, will spill all over the place if you pick them up and put them down often. So I find myself eating them very quickly, anxiety rising the whole time. All I can think is – don’t spill, don’t spill, don’t spill. Popsicles on the other hand, will melt on your hands and get very sticky if you don’t work fast enough. Again, causing me to eat them too quickly and – you get the point. I have food anxiety.
That generally means that I stay away from those foods just because the experience of eating them isn’t as pleasant to me as others. BUT there comes a time in the summer when it’s too hot for anything but popsicles and smoothies and such. (PLUS it’s POPSICLE WEEK.) So I suck up my weird anxieties and I make some popsicles, letting them melt all over my fingers in the process.
However, in order for me to give in to a popsicle it has to be worth it. Worth every sticky moment. So I thought about my favorite kinds of popsicles – fudgesicles. Cause who can resist a chocolatey, creamy deliciousness? (Even if it does melt at the speed of lightning.) So I decided to make that idea a little health-ier so the experience is even more *worth it.* So I added some turmeric up in that thang, took out the dairy, and sweetened it with maple syrup. So it’s healthy and creamy and chocolatey and golden and delicious.
WORTH IT.
So I’m doing my best to get over my weird anxieties so that I can eat popsicles like a normal person and participate in popsicle week. I’m getting there. And despite my weirdness, I think you’ll love these popsicles. ‘Cause if my strange-ass can love them, I think anyone can. They’re good for your body and for your tummy. You should check out all the other delicious popsicles in this year’s popsicle week if you’re a normal human who loves popsicles. ‘Cause they’re delicious. xo

These are absolutely worth every sticky moment. (Also, I want to trade in my popsicle mold for yours – where did you get those??)

They are actually Meg’s of This Mess is Ours, but I know she got them off of Amazon. I think just a quick “metal popsicle mold” search would do it. xoxo
