Healthy 4th of July Jello Cups
- 4 cups apple juice, the REAL stuff
- 6 teaspoons agar agar*
- 2 cups raspberries (sub strawberries)
- 1 cup blueberries
- Add your apple juice and agar agar flakes to a pot and heat over high heat until boiling.
- Once boiling, reduce heat, stir, and simmer for 5-7 minutes. (You want all of the flakes to disappear.)
- Evenly divide the juice between 8-10 small serving containers.
- Gently drop in your raspberries and blueberries into the juice, evenly spacing them between all containers.
- Refrigerate for at least 6 hours before serving.
- EAT UP!
*Agar agar flakes (also known as agar) can be found in the seaweed section of any health food store, or ethnic market!

As the 4th of July approaches, I can’t help but think what a strange (and strained) time it is to be celebrating the independence of America. Generally I’m all about the Americana thing (in the most Lana Del Rey way possible.) But this year I feel a deep heartache when I think about the state of our nation (and our world). The liberty and justice for all seems to be missing. My heart hurts for the oppressed and victimized cultures that are trying to live full lives here in America.
In light of all the violence and hatred in the world at the moment : let’s all just take a minute to hug someone you love, speak (kindly) to a stranger, breathe in deeply, repeat some words of kindness to our own bodies/souls, and eat some good food. Softening our own hearts to what we do not understand is the only way to make this country a better place. It starts right here. It starts with us.
Speaking of eating good food, let’s get a little less serious and talk about how to make jello without gelatin! Since gelatin has horse hooves in it and whatnot, I’d rather not put it in my body. So in walks agar agar and all is well with the world! What the heck is agar agar (also called agar), you ask? Well it’s a seaweed that comes in a flaky form and when you boil it into a liquid and cool it, it becomes jello-like. I say “jello-like” because it’s not exactly as gelatinous as jello. But it’s pretty dang close. And pretty dang delicious.
The other great thing about making jello with agar agar is the fact that you know exactly what goes into it. This one has no sweeteners except REAL fruits! So it’s just good for your body and tastes like dessert. That’s some major magic. And that’s the kind of thing you should be putting into your body this 4th of July – something that hydrates you, says “I love you” to your body, and tastes delicious. K that’s all. Love each other.
