Apple-Ginger-Turmeric Immunity Boosting Popsicles
- 2 cups apple juice*
- 2 tablespoons raw honey
- 2 lemons, juiced
- 2 tablespoons ginger root, chopped
- 1 tablespoon turmeric root, chopped
- Peel or cut off the skin of your ginger and turmeric, then chop into small pieces.
- Add all ingredients to a blender. Blend on high until smooth and probably frothy.
- Pour the juice into popsicle molds.
- Freeze overnight.
- EAT (lick?) UP!
*Get REAL apple juice, please. Not just sugar water - that won't help your body heal.
When I start to get a tickle in my throat or feel a sickness coming on I go into full on mom-of-the-year mode. I take ginger shots, drink turmeric milk, down gallons of tea/water/coconut water, etc. I am a master of protecting my body from sickness. But this week, I have watched over half of my family get sick with some lung/cough/throat virus and not many of them know what to do aside from wait for a doctor to prescribe something and rest.
Winter is different. In the winter, people pull out soup, cozy up in a blanket, and drink some tea. But summer – summer is a miserable time to get sick. And I have found that many people don’t know how to comfort themselves in the midst of summer sickness.
If I were in LA, I would hop on over to one of my favorite juice shops and grab an immunity boosting juice. But since I’m out of the health-centric bubble called the West Coast, I’m making my own ginger-turmeric-lemon shots these days and chugging them each morning in an effort to stay well. And in the midst of drinking my morning tonic, I thought… “Why don’t I make this into a popsicle????” That way I can have more of it, and it will be more summer-friendly.
So that’s what I did. And now you know what to make when your throat starts to hurt, or if a friend falls prey to summer sickness. POPSICLES TO THE RESCUE!!! It’s so not hard to do and you’ll be a hero to the sick. While medicine is easy to take and sometimes helpful, I just don’t think Hippocrates was wrong when he said, “Let food be thy medicine.” We can heal ourselves. We just need a little more loving kindness (oh and some apple-ginger-turmeric-lemon-honey popsicles!)
