Key Lime Pie Breakfast Parfait
Ingredients
Key Lime Yogurt
- 2 cups nonfat greek yogurt
- 1 ripe avocado
- 2 limes, juiced
- 1 teaspoon lime zest
- 2 tablespoons honey (sub agave nectar or coconut nectar)
Almond Cookie Crumble
- 1 1/2 cups almond flour
- 3 tablespoon coconut oil, melted
- 1/2 teaspoon cinnamon
- 1 tablespoon coconut sugar
- 1/2 teaspoon baking soda
- 1/2 teaspoon vanilla extract
Toppings Mix
- 1/2 cup macadamia nuts
- 1/3 cup coconut shreds
- 1/4 cup pumpkin seeds
- honey, drizzled (sub agave nectar or coconut nectar)
Instructions
Key Lime Yogurt

Combine all ingredients in a blender or food processor and blend until smooth.

Set aside in the refrigerator until you are ready to serve.
Almond Cookie Crumble

Preheat your oven to 350.

Mix all almond cookie ingredients together, except the coconut oil. Add the oil and mix until the batter is clumpy.

Then use your hands to form the dough into a ball. Line a cookie sheet with greased parchment paper, and lay down the batter.

Press the batter flat, about 1/4 inch thick. Bake for 12-14 minutes. Allow to cool for 20 minutes, before breaking into pieces.
Parfait Assembly

Break 1/3 cup almond cookie crumble into the bottom of each parfait.

Add 1/2 cup of the key lime yogurt on top of the cookie crumble.

Top with a mix of macadamia nuts, coconut shreds, and pumpkin seeds. Top with honey drizzle.

I made this recipe with my sister today, and we ate it while watching the Wimbeldon final. I’d call that a highly magical morning. Plus this parfait… IT’S STRAIGHT UP MAGIC. MAGIC IN YOUR MOUTH. The healthiest and most unique way to eat the flavors of key lime pie. (Anddddd it’s so easy!)
The almond cookie crumble is slightly sweet and slightly moist, so it forms perfectly into a “crust” for your pie parfait. It’s yummy and healthy! Everything a human person could wish for.
The next two layers are almost too good to speak of. Yogurt that tastes tangy and sweet and creamy and dreamy is the crux of this parfait. And when you top that combo off with the crunch of nuts and coconut, and a sweet drizzle of honey -this thing takes no prisoners. Your mouth will forever thank you.
If you are thinking “isn’t it weird to add avocado to yogurt for breakfast?” You have got to expand your horizons! Because basically you don’t taste the avocado. It just adds color and thickness and creaminess. So it’s a win-win-win-win. Just add the avocado and be happy about it. Plus you are getting those heart-healthy fats in for breakfast!
