Popsicle Week happens once a year and it’s hosted and organized by our commander and popsicle chief, Wit and Vinegar. He corrals a bunch of us food bloggers into making a delicious assortment of cold, summery treats. So here you go! My popsicle of the year…
These Key Lime Pie Chia Pudding Popsicles came to me in a quick moment of inspiration after I pondered if you could successfully freeze chia pudding, did a quick google search and found out that everyone and their mother is already on this trend. So I jumped on the bandwagon, but wanted to add a unique flavor! A star was born.
These popsicles are just as healthy as chia pudding, so you can literally eat them for breakfast. They’re totally dairy free, 5 ingredients, and a creamy, textured treat. I highly suggest packing some crumbled up graham crackers in there, but that’s totally up to you.

Key Lime Pie Chia Pudding Popsicles
Ingredients
- 1 3/4 cup (about 1 can) full fat coconut milk
- 1/2 cup chia seeds
- 1/4 cup maple syrup
- 2 limes, juiced
- 1 lime, zested
- 1 tsp vanilla extract
- 2-3 graham crackers, crumbled (optional)
Instructions

In a medium bowl, whisk together coconut milk, chia seeds, maple syrup, lime juice, lime zest, and vanilla extract.

Once mixed, refrigerate for at least 20 minutes.

After 20 minutes, whisk again and then pour evenly into 6-8 popsicle molds, leaving a little room at the top if you want to add graham crackers.

Gently press your graham crackers into the top of the popsicle mold.

Add your sticks and cover. Freeze for at least 6 hours.

Run molds under warm water until they slide out.

I have nothing grand and inspiring to say here, so I thought I’d just give you a little honest life update. Here it goes…
I’ve officially been living in NYC for 8 months now. Crazy how time flies. I feel like I’ve hardly been able to catch my breath and really see the city.
I’ve spent the last few months working 10 hour days nearly every day to bring you these DIY Food Videography Courses, so I’m worn out. The end is in sight, but man this has been a challenging process. If you ever want to launch your own course, come talk to me cause I’ve learned A LOT.
It’s been nearly 3 years since I first injured my lower back. It’s been painful, frustrating and sometimes limiting. Only in the last couple of weeks have I found a methodology that I think my correct the core issue. Fingers crossed this is really the answer for me.
My sister is pregnant and I think about my future niece about 12 times a day.
I am about to go on vacation with my family and I’ve never been more excited to turn my phone off.
