Pickled Eggplant Mediterranean Bowl with Faux-lafel

This Pickled Eggplant Mediterranean Bowl with yogurt dill couscous, homemade hummus, Hilary's mediterranean bites (aka. faux-lafel), and pita makes the perfect meal!

Ingredients

Pickled Eggplant

  • 1 eggplant, cut into strips - removing the outside skin
  • 1 cup water
  • 1 cup white vinegar
  • 3 tablespoons coconut sugar
  • 1 tablespoon salt
  • ½ teaspoon pepper
  • ½ teaspoon turmeric

Yogurt Dill Couscous

  • 2 cups Israeli couscous, cooked according to package
  • 1/2 cup plain yogurt (soy, coconut or greek)
  • 1 1/2 tablespoons fresh dill, chopped
  • 1/2 teaspoon apple cider vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Hummus

  • 1 15oz can of chickpeas, drained and rinsed
  • 2 garlic cloves, minced
  • 1 lemon, juiced
  • ¼ cup tahini
  • ½ cup pickle brine
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. 24-28 hours before making your bowl, pickle your eggplant. Heat a pot with water, white vinegar, coconut sugar, salt, pepper and turmeric over high heat. Once the pot is boiling add in your eggplant strips. Take the pot off of the heat and let sit for 10 minutes. After 10 minutes transfer the egg plant and liquid into a sterilized jar. Store in the refrigerator until ready to bake.
  2. Preheat oven to 400.
  3. Remove your eggplant from the bring and lay it onto a baking sheet lined with parchment paper. Bake for 25-30 min.
  4. On a separate baking sheet, lay your Hilary's Mediterranean Bites flat and bake for 17-20 mins, flipping halfway through.
  5. While your things are baking, toss your couscous with yogurt, dill, apple cider vinegar, salt and pepper. Set aside.
  6. In a blender or food processor add all of your hummus ingredients, and blend until smooth.
  7. When all elements are ready, assemble your bowls by dividing all ingredients into 2-3 bowls. Serve with pita if desired. EAT UP.

There is a little Mediterranean food stand in Atlanta that displays a bunch of pickled veggies along their counter. Since I love me some pickles, I was surveying what they had, and by far the most interesting vegetable was eggplant. So I tucked that idea into my back pocket to use at the perfect time. That time is here and now. So get ready, ’cause your freaking mind is about to be blown.

I used my classic Brewing Happiness pickle brine, that I have used on all of my pickled veggies. Including the ones for this BBQ Tofu Wrap. The brine has some turmeric in it, hence the bright yellow color of the eggplant. It also is sweetened with a small amount of coconut sugar instead of refined sugar. So that makes it kewl too. All you have to do is boil your brine, throw in the eggplant and let it sit for 24-48 hours. Then you take it out and put it in the oven to give it that nice softness you want. And let me tell you, the flavor is super dope. (Oh and did I mention, that I added some of the brine to the hummus to make it extra special?!?)

The other snazzy element of this bowl is the “faux-lafel” I used. They are Hilary’s Mediterranean Bites and they are INCREDIBLE. It’s sorta like falafel, but MUCH lighter and totally not fried! WOO. Plus they are free from like all allergens. Dairy free. Gluten free. Vegan. Nut free. And fresh to death. You can find them in the freezer section of most grocery stores. You’re gonna want to stock up, ’cause if you’re experience is anything like mine, they’ll be gone fast.

So there you have it. All the good things together in a bowl, and just waiting for you to dive right in. Excuse me while I go dip everything in hummus and devour my Mediterranean Bites package. I have no shame when it comes to this one. It’s just too good. K byeee.
