Because who doesn’t want to eat all of the best Fall flavors in one spoonful?

Pumpkin-Coffee-Almond Banana Ice Cream
Ingredients
- 3 frozen bananas
- 1/2 cup pumpkin puree
- 1/2 cup coconut milk
- 2 tablespoons almond butter
- 1 tablespoon coffee grounds
- 1/2 teaspoon pumpkin spice mix
- 5-6 medjool dates, pitted
Instructions

Put all the ingredients into a blender or food processor.

BLEND. Until they are all smooth and combined.

Put the mixture into a freezer safe container, and freeze for at least a couple of hours.

Serve, and thank the heavens that pumpkins exist.
So it’s now officially Fall, right? Well maybe for most of the country it is, but over here in LA it’s still sweltering hot. Like 100 degrees hot. Like miserable hot. So that’s not okay, because I want to be enjoying things like pumpkin spice lattes and soup and cuddling with boys in sweaters. But instead I’m sequestered to highly air conditioned rooms of my house, drinking iced coffee, trying to stop sweating. So that’s frustrating to say the least. But I figured out a way to get everything I want all at one time – BANANA ICE CREAM! Woo.
Yeah the flavors were such a good combo and really did taste like fall. And the best part is the ingredients are simple: frozen bananas, pumpkin puree, coffee grounds, almond butter, and dates. There are a few other surprises in there (just read the recipe, and I’ll reveal all my secrets. haha), but for the most part this stuff is SUPER SIMPLE. Even YOU, yes YOU can make this. Flawlessly.
So even if you aren’t living in sweltering hot heat during “Fall,” this is a great cozy treat for all the people who want the flavors of Fall in and around their mouth. Also, rumor has it that banana ice cream is great for curing heartbreak or just general gloomy day sadness…. So that’s pretty cool. Get it, “COOL.” *Insert snowflake emoji*
