Sometimes I don’t want a cozy bowl of oatmeal or a pumpkin pie. Sometimes I want to feel that nice fall sunshine on my face and drink something that makes me feel healthy. So I threw together this Fall Harvest Pumpkin-Carrot Blender Juice made of pumpkin puree carrots, pineapple, apples, and pumpkin spice. It tastes fruity but also like pumpkin, so it’s refreshing and fall all in the same sip. Plus, it’s super easy to make.
Just throw all of your ingredients together in a blender and blend until smooth. If you don’t have a high speed blender, you may have to add more water to get it to blend, but it will still taste good. If you layer the ingredients from softest to hardest, it will be easier for your blender to blend. In this case that means you start with the pumpkin puree then layer on pineapple, apple and carrots. Top the ingredients off with pumpkin spice and pour in your water before blending. It should work like a charm.
After you blend, you’ll end up with a very thick, pulpy juice. You *could* drink it like this, but I prefer to strain it. You just need a fine mesh strainer or a cheesecloth and you just let the juice strain through. If you’re using a fine mesh strainer, use a spatula to gently press the mixture to get out the extra liquid. You will end up with a good amount of pulp at the end of this process. I like to use mine as a pumpkin puree substitute and make pumpkin bread or pumpkin pie or something like that. It’s a fun way to add even more flavor to your traditional fall dishes!

Fall Harvest Pumpkin-Carrot Blender Juice
Ingredients
- 3 large carrots, cut into chunks
- 4 small gala apples, cored and diced
- 2 heaping cups pineapple, cored and diced
- 1 cup pumpkin puree
- 2 cups water
- 2 teaspoons pumpkin spice
Instructions
To make in a high speed blender:

Add all ingredients to a blender.

Blend on high until very smooth.

Pour through a fine mesh strainer or cheese cloth, until only juice is left.

Serve over ice with apple slices and a dash of pumpkin spice!

DRINK UP.
To make in a juicer:
-
Add each ingredient on it's own to the settings specified by your juicer.

Once juiced, mix with water and pumpkin spice.

Pour over ice and serve with apple slices and a dash of pumpkin spice.

Who needs a juicer when you can just blend and strain?!? So much cheaper! lol.
