I promise IT’S DELICIOUS…the proof is in the pudding.

Salted Tahini Chocolate Pudding
Ingredients
- 1 small avocado
- 1/3 cup tahini
- 2 tablespoons cacao powder
- 3 tablespoons honey (sub agave nectar or coconut nectar)
- 1 tablespoon coconut sugar
- 2 tablespoons non dairy milk
- 1/4 teaspoon vanilla extract
- 1/4 teaspoon salt
Optional Toppings:
- cacao nibs
- coconut sugar
- salt
- whipped cream
- cool whip
Instructions

Place all ingredients in a blender or food processor.

Blend until very smooth.

Remove from blender and transfer to a bowl.

If desired, chill before eating - if not... top with desired toppings and EAT UP.
As a kid I was a BIG fan of those jello pudding packs with the white pudding and the chocolate pudding. (What flavor even is the white pudding?) I don’t know, but I do know that I probably ate 1-2 of those per day until I was in middle school. So there is a chance my body is made of 30-40% pudding at this point. But I don’t hate it. I just know that my body can no longer keep up with the jello pudding ingredients. So I stopped eating pudding all together for a while. (Well, except healthy banana pudding…) But I wanted to find a way to eat it chocolate pudding again without feeling guilty and gross, because pudding makes a great sweet snack, because it’s so easy to make and carry around with you!
So this pudding is my solution to the Jello pudding pack conundrum. It’s equally as creamy and decadent, but it’s all healthy and clean ingredients! Plus the avocado in it is going to provide you with some healthy fats, and the tahini will boost the protein level. So it’s not just a dessert, it’s a dessert with a purpose. Pudding, nourishing your body one bite at a time.
If you are wondering what effect the tahini has on the pudding’s flavor I’ll say this… it adds a slight earthy flavor. But I don’t mean “earthy” in the mushroom tea kind of way. I mean it more in the rich underlying (and complimentary) flavor kind of way. It’s really going to amplify and highlight the chocolate flavors. OH YES. So basically you’re gonna need to make this pronto. As in, not in 5 minutes but NOW. (Cause then you can be eating in 5 min.)
