Recipe Notes
*Try making your pickled jalapenos from scratch! It's wayyy easier than it sounds. Check out my recipe here.
Since I’m now officially living in Atlanta. I thought I would do a post based on “Georgia food” and basically what that ended up coming down to was… football. You see, I’ve been made intensely aware that it is now football season, and here in the south that is a ride or die situation. So I decided to jump on the bandwagon (sort of.) I figured I could at least make a dip that would be the hit of any tailgate. So here it is in all of it’s overly simple and delicious glory!
I really love those layered bean dips that have refried beans at the bottom, guacamole, sour cream, salsa and cheese all up in them. But they aren’t that good for your body. So I thought, how about we combine some of the layers into ONE DIP, and also make it healthy?!? So there are refried black beans, avocado (basically pre-guacamole), and greek yogurt (which has all the creamy elements of sour cream). Then if you add some pickled jalapenos to the top – which I HIGHLY recommend – you get the synthesis of all the good parts of bean dip with none of the guilt.
May your tailgates be fun, may your team win (whoever that is), and may your bean dip be delicious and healthy.
