I made the best french toast ever. This is not an arrogant or exaggerated sentence. This is the gosh darn truth, y’all. It’s hard to go wrong when you choose challah as the base to your french toast masterpiece, but when you layer on summer stone fruit and lemon tahini syrup… well, that’s a whole different ball game.
That’s right. Here’s how this french toast goes…
- Challah bread. (Or you can sub whatever kind of bread you prefer/have on hand.)
- A lightly lemony batter for your french toast. (Ps. it’s dairy free!)
- Stone fruit soaked in coconut sugar and lemon juice. (Sweet and tart and delicious.)
- A very easy to make lemon tahini syrup (aka. lemon juice + maple syrup + tahini)
I got high compliments from my Jewish best friend/roommate on this one, so you know I did the challah + tahini thing justice.

Summer French Toast with Lemon Tahini Syrup
This Summer French Toast with Lemon Tahini Syrup is topped with apricots, plumbs, and cherries and tastes like absolute heaven. BREAKFAST PERFECTION.
Ingredients
Summer Fruit Topping
- 4 apricots, sliced
- 10 sweet cherries, pitted and sliced
- 3-4 small yellow plumbs, sliced
- 1/2 lemon, juiced
- 1 tbsp coconut sugar
French Toast
- 1 small loaf bread, sliced into 1" thick slices (I used challah)
- 3 eggs
- 2/3 cup non-dairy milk
- 1 tbsp coconut sugar
- 1/2 tsp vanilla extract
- 1/2 tsp cinnamon
- 1/2 tsp lemon zest
Lemon Tahini Syrup
- 1/3 cup tahini
- 2/3 cup maple syrup
- 1/2 lemon, juiced
Instructions

Start by adding all of your sliced fruit toppings to a small bowl. Squeeze lemon juice over the fruit and sprinkle with coconut sugar. Toss and set aside.

In a large wide bowl, add all french toast ingredients (excluding bread). Whisk together until well combined.

Add your bread into the french toast batter, soaking each side for 1 minute.

Heat a skillet with coconut oil or butter over medium-low heat. Add soaked slices of bread to skillet and cook on each side for 2-3 minutes, until slightly browned. Do this for all french toast slices.

Meanwhile, whisk together tahini, maple syrup, and lemon juice in a small bowl. Set aside.

When french toast is ready, transfer to a plate, top with fruit, and drizzle with lemon tahini dressing.
