WHAT IS IT?
Tofu is a meat substitute that is made from soy bean curd. It comes in a white block with different densities. For my recipes I usually use extra firm, or high protein tofu.
WHAT MAKES IT HEALTH-IER?
Tofu is a low calorie protein source with no cholesterol. Plus going meatless can lead to lower blood pressure, reduced risk at heart disease, and positive environmental effects.
HOW DO I USE IT?
Tofu comes soaked in water, so you will want to “press” it before cooking with it. Meaning, wrap it in a towel or paper towels and allow something heavy to sit on top of it for a while. This will allow some of the water to press out. Then you can cut it into slices or cubes or crumble it. Season to your liking – tofu is virtually flavorless, so you can make it taste like almost anything you choose!
