Twix Pudding Parfait
Ingredients
Almond Cookie Crumble Ingredients
- 1½ cups almond flour
- 3 tablespoon coconut oil, melted
- ½ teaspoon cinnamon
- 1 tablespoon coconut sugar
- ½ teaspoon baking soda
- ½ teaspoon vanilla extract
Date-Caramel Ingredients
- 2 cups Medjool dates, pitted
- ⅓ cup non dairy milk
- ½ teaspoon vanilla extract
- ¼ teaspoon sea salt
Salted Tahini Chocolate Pudding Ingredients*
- 1 small avocado
- ⅓ cup tahini
- 2 tablespoons cacao powder
- 3 tablespoons honey (sub coconut nectar)
- 1 tablespoon coconut sugar
- 2 tablespoons non dairy milk
- ¼ teaspoon vanilla extract
- ¼ teaspoon salt
Instructions
Almond Cookie Crumble Instructions

Preheat your oven to 350.

Mix all almond cookie ingredients together, except the coconut oil. Add the oil and mix until the batter is clumpy.

Then use your hands to form the dough into a ball. Line a cookie sheet with greased parchment paper, and lay down the batter.

Press the batter flat, about ¼ inch thick. Bake for 12-14 minutes. Allow to cool for 20 minutes, before breaking into pieces.
Date-Caramel Instructions

If your dates aren't soft, fill a small pot with water just enough to cover the dates. Place on the stove on high and bring to a boil, once the water is boiling reduce heat to a simmer for 3-5 minutes. After 5ish minutes, take off the heat, drain the water and toss the dates into a blender or food processor.

Once your dates are soft add all the ingredients to a blender or food processor and blend until smooth.

Put in a bowl and set aside. (Can store - covered - in fridge for up to a week!)
Salted Tahini Chocolate Pudding Instructions

Place all ingredients in a blender or food processor.

Blend until very smooth.

Remove from blender and transfer to a bowl.

If desired, chill before eating - if not...

Layer your parfait - almond cookie, date-caramel, salted tahini chocolate pudding - and EAT UP.
Recipe Notes
*** If you want regular 'ole chocolate pudding instead of salted tahini, just substitute 1/4-1/3 cup extra almond milk for the tahini and remove the salt!
In my craving for Halloween candy, I had the genius epiphany that if I took the Almond Cookie Crumble from my Key Lime Pie Breakfast Parfait, layered it with the Date-Caramel I put on my Savory Granola Pancakes, and topped it off with some Salted Tahini Chocolate Pudding I basically had a grown up (and health-ified) version of a Twix bar in a parfait form. BOOM. Have I ever had a more genius idea in my life??? Probably not. (Let’s just hope my ideas don’t peak here.) BUUUUTTTT truthfully, if this is my highest dessert accomplishment I can die happy. IT TASTES SO FREAKING GOOD.
This is defiantly a “mature” version of a Twix. This is due to a number of things, but mostly due to the fact that you are using salted tahini chocolate pudding instead of just regular ‘ole chocolate. BUT, if you want it to be a normal chocolate flavor, try replacing the tahini with about 1/4-1/3 cup of almond milk. This will keep it creamy, but won’t give you the rich, earthy flavor of tahini.
Let’s talk about the other element to this pudding parfait that makes it “grown up” – the healthiness factor. Here’s what health-ifies this Twix-inspired pudding parfait…
- Naturally sweetened (aka. no refined sugar!)
- No flour.
- No dairy.
- Full of healthy fats like avocado, coconut oil, and tahini.
- Made with cacao, which is packed with antioxidants!
You see? There are health-ier ways to indulge in the treats we all love. You don’t have to sacrifice your health to do it! YAY for having it all! YAY FOR HEALTH AND HAPPINESS.

Hahaha!! I did the same thing. That was my vending machine lunch. My mom sent me to school with money thinking I would get something from the cafeteria, but I always just got twix 😉 My friends always made fun of me because I never had anything else.
