Fudgy Grain Free Brownies

These fudgy grain free brownies are not only the best brownies you've ever had, they're also gluten free, made with ghee, and sweetened with coconut sugar!

Ingredients

  • 3/4 cup ghee (180g)
  • 9 oz 85-90% dark chocolate, divided (255g)
  • 3/4 cup cacao powder (sub unsweetened coco powder) (75g)
  • 3/4 cup Bob's Red Mill Almond Flour (75g)
  • 1/3 cup Bob's Red Mill Cassava Flour (55g)
  • 1 tsp salt (3g)
  • 2 1/4 cup Bob's Red Mill Coconut Sugar (360g)
  • 4 large eggs
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 325.

  2. Over medium flame heat ghee until melted. Lower flame and add 7oz (a scant 1 1/2 cups) dark chocolate. Let chocolate melt completely. Take off heat and set aside.

  3. In a fine mesh sieve over a medium mixing bowl, combine almond flour, cassava flour, cacao powder and salt. Sift together and set aside.

  4. In the bowl of a standing mixer, or in a large bowl using a hand mixer, combine coconut sugar, vanilla extract and eggs. Mix on hight speed until soft peak trails form. Lower mixer to medium seed, gradually add in chocolate ghee, just until incorporated.

  5. Chop remaining 2 oz (1/4 cup) of dark chocolate into chunks. Set aside.

  6. In two batches add dry ingredients, mixing on low to combine. When everything is fully incorporated, stir in chocolate chunks.

  7. Spread 1 tsp of ghee on bottom and sides of a 9x9 pan and coat with 2 tbsp cassava flour.

  8. Pour batter in pan, spread evenly with a spatula. Bake for 35 mins, or until desired consistency.

  9. Slice and EAT UP.
