This 5 Minute Asian Rainbow Salad with Creamy "Peanut" Dressing is stupid simple and perfect for work, school, or family dinner!
In a blender or food processor, blend together your Creamy "Peanut" Sauce and set aside.
In a large bowl combine your healthyish slaw, shredded carrots, and red bell pepper. Season to taste with salt and pepper. Toss to combine.
Drizzle 1/2 cup of Creamy "Peanut" Sauce over your salad and toss again until well coated. (Save the rest of the sauce to pour over your salad when you eat it, if you want.)
Serve your salad with a sprinkle of sunflower seeds and a protein of choice, or eat it alone. (This salad makes a great work or school lunch - and you can even turn it into a wrap!)
