  • 11 oz bag of healthyish slaw, I like Trader Joes Broccoli & Kale Slaw
  • 1 1/2 cups shredded carrots
  • 1 red bell pepper, cut into matchsticks
  • salt and pepper, to taste
  • 2 tablespoons sunflower seeds
  • protein of choice, I like grilled tofu or chicken
  • 1/2 cup Creamy "Peanut" Sauce

  1. In a blender or food processor, blend together your Creamy "Peanut" Sauce and set aside.

  2. In a large bowl combine your healthyish slaw, shredded carrots, and red bell pepper. Season to taste with salt and pepper. Toss to combine.

  3. Drizzle 1/2 cup of Creamy "Peanut" Sauce over your salad and toss again until well coated. (Save the rest of the sauce to pour over your salad when you eat it, if you want.)

  4. Serve your salad with a sprinkle of sunflower seeds and a protein of choice, or eat it alone. (This salad makes a great work or school lunch - and you can even turn it into a wrap!)

  5. EAT UP.
