  • 1 cup oats
  • 2 cups non dairy milk
  • pinch of salt
  • 1 tablespoon hemp seeds
  • 1 tablespoon chia seeds
  • 1 tablespoon almond butter
  • 1/2 teaspoon vanilla
  • 2 teaspoons coconut oil
  • 1/3 cup pecans, chopped
  • 1/4 cup pepitas
  • 1 fuji apple, cubed
  • 1 persimmon, cubed
  • 1/4 teaspoon cinnamon
  • 1/8 teaspoon ginger powder
  • 2 tablespoons honey
  • 2 tablespoons pomegranate seeds


  1. Heat a pot with non dairy milk and a pinch of salt over high heat until boiling. Once boiling, reduce heat to low, add oats, stir and cover.
  2. After 10 minutes, add in hemp seeds, chia seeds, vanilla extract and almond butter. Stir again, cover, and let sit for another 5-10 minutes or until it is your desired consistency.
  3. Meanwhile, heat a pan over medium heat with 2 teaspoons coconut oil. Add in pecans and pepitas and toss consistently for two minutes. Add in apples, persimmon, cinnamon, and ginger, and toss for two additional minutes.
  4. Finally, pour honey over the pan, toss until everything is coated, and take off heat.
  5. Divide oats and toppings into 2 bowls and sprinkle each bowl with 1 tablespoon of pomegranate seeds.
  6. EAT UP.
