Curried Millet Ingredients:

  • 1/2 cup dry millet
  • 1 1/4 cup non dairy milk
  • 1/4 teaspoon turmeric powder
  • 1/4 teaspoon ginger powder
  • 1/4 teaspoon smoked paprika
  • a dash of salt & pepper

Spicy Cauliflower Ingredients:

  • 2 tablespoons olive oil
  • 1/2 sweet onion, diced
  • 1/4 cup green onion, diced
  • 2 cups cauliflower florets, chopped
  • 1 cup celery, chopped
  • 1/3 cup raisins
  • 1/4 cup raw cashews
  • 2 tablespoons cashew nut butter (sub almond or peanut butter)
  • 1 tablespoon garlic chili sauce (sub sriracha)
  • 2/3 cup non dairy milk
  • 1 garlic clove, minced


Curried Millet Instructions:

  1. Add millet and non dairy milk to a small pot and heat over high heat until boiling. Once boiling, reduce the heat to low, cover the pot and let simmer for 20-25 minutes.
  2. Check to see if the millet has sucked up all of the liquid. Once it has, add in all of the spices, and mix. Divide the millet between two bowls and top with spicy cauliflower.

Spicy Cauliflower Instructions:

  1. In a large skillet add olive oil, sweet onion, green onion, cauliflower, celery and garlic. Sauté over medium high heat for about 5-7 minutes, just until the onions start to become translucent.
  2. Add non dairy milk, cashew nut butter, garlic chili sauce, cashews and raisins to the skillet. Stir until all ingredients are covered with nut butter and spice. Cook over medium-high heat just until the liquid is absorbed, 2-3 minutes.
  3. Top millet with spicy cauliflower, and sprinkle with extra chopped green onions.
  4. EAT UP.
