Pickled Eggplant Mediterranean Bowl with Faux-lafel

This Pickled Eggplant Mediterranean Bowl with yogurt dill couscous, homemade hummus, Hilary's mediterranean bites (aka. faux-lafel), and pita makes the perfect meal!

Ingredients

  • 10-12 Hilary's Mediterranean Bites
  • 1-2 pita,sliced into wedges

Pickled Eggplant

  • 1 eggplant, cut into strips - removing the outside skin
  • 1 cup water
  • 1 cup white vinegar
  • 3 tablespoons coconut sugar
  • 1 tablespoon salt
  • ½ teaspoon pepper
  • ½ teaspoon turmeric

Yogurt Dill Couscous

  • 2 cups Israeli couscous, cooked according to package
  • 1/2 cup plain yogurt (soy, coconut or greek)
  • 1 1/2 tablespoons fresh dill, chopped
  • 1/2 teaspoon apple cider vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Hummus

  • 1 15oz can of chickpeas, drained and rinsed
  • 2 garlic cloves, minced
  • 1 lemon, juiced
  • ¼ cup tahini
  • ½ cup pickle brine
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. 24-28 hours before making your bowl, pickle your eggplant. Heat a pot with water, white vinegar, coconut sugar, salt, pepper and turmeric over high heat. Once the pot is boiling add in your eggplant strips. Take the pot off of the heat and let sit for 10 minutes. After 10 minutes transfer the egg plant and liquid into a sterilized jar. Store in the refrigerator until ready to bake.
  2. Preheat oven to 400.
  3. Remove your eggplant from the bring and lay it onto a baking sheet lined with parchment paper. Bake for 25-30 min.
  4. On a separate baking sheet, lay your Hilary's Mediterranean Bites flat and bake for 17-20 mins, flipping halfway through.
  5. While your things are baking, toss your couscous with yogurt, dill, apple cider vinegar, salt and pepper. Set aside.
  6. In a blender or food processor add all of your hummus ingredients, and blend until smooth.
  7. When all elements are ready, assemble your bowls by dividing all ingredients into 2-3 bowls. Serve with pita if desired. EAT UP.
