Mint Chocolate Breakfast Parfait

Homemade dark chocolate granola combines with honey-mint greek yogurt to create this mint chocolate breakfast parfait - the only breakfast you'll want from now on.

Dark Chocolate Granola:

  • 1 cup oats
  • ½ cup raw pumpkin seeds (sub raw almonds or cashews)
  • 1/2 cup raw cashews (sub almonds or pistachios)
  • cup unsweetened coconut flakes
  • 1/4 cup coconut oil, melted
  • 1/4 cup coconut butter, melted
  • 2 tablespoons cashew nut butter (sub almond or peanut butter)
  • 2 tablespoons hemp seeds
  • 2 tablespoons coconut sugar
  • 2 tablespoons cacao powder
  • ½ teaspoon cinnamon
  • ½ teaspoon salt
  • 1/2 cup dark chocolate, 70% cacao or above, chopped into bite sized pieces

Honey-Mint Yogurt:

  • 2 cups nonfat greek yogurt
  • 2 tablespoons honey (sub agave nectar or coconut nectar)
  • 1/2 teaspoon peppermint extract

Optional Toppings:

  • mint leaves
  • fruit (ie. apples, strawberries, raspberries, pomegranates)


  1. Preheat your oven to 350.
  2. Mix together your granola ingredients (excluding the dark chocolate) in a bowl until well combined.
  3. Spread your granola evenly onto a baking sheet lined with parchment paper.
  4. Bake for 30 minutes, tossing every 10 minutes.
  5. Take out and let cool for 10-20 minutes.
  6. Once cool, add in dark chocolate bits.
  7. Mix together your yogurt ingredients, and divide evenly between 3-4 bowls. Top with 1/3-1/2 cup dark chocolate granola. Top with any other desired toppings.
  8. EAT UP.
