Key Lime Pie Chia Pudding Popsicles

  • 1 3/4 cup (about 1 can) full fat coconut milk
  • 1/2 cup chia seeds
  • 1/4 cup maple syrup
  • 2 limes, juiced
  • 1 lime, zested
  • 1 tsp vanilla extract
  • 2-3 graham crackers, crumbled (optional)


  1. In a medium bowl, whisk together coconut milk, chia seeds, maple syrup, lime juice, lime zest, and vanilla extract. 

  2. Once mixed, refrigerate for at least 20 minutes. 

  3. After 20 minutes, whisk again and then pour evenly into 6-8 popsicle molds, leaving a little room at the top if you want to add graham crackers.

  4. Gently press your graham crackers into the top of the popsicle mold. 

  5. Add your sticks and cover. Freeze for at least 6 hours. 

  6. Run molds under warm water until they slide out.

  7. EAT UP.
