Summer Fruit Topping

  • 4 apricots, sliced
  • 10 sweet cherries, pitted and sliced
  • 3-4 small yellow plumbs, sliced
  • 1/2 lemon, juiced
  • 1 tbsp coconut sugar

French Toast

  • 1 small loaf bread, sliced into 1" thick slices (I used challah)
  • 3 eggs
  • 2/3 cup non-dairy milk
  • 1 tbsp coconut sugar
  • 1/2 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/2 tsp lemon zest

Lemon Tahini Syrup

  • 1/3 cup tahini
  • 2/3 cup maple syrup
  • 1/2 lemon, juiced


  1. Start by adding all of your sliced fruit toppings to a small bowl. Squeeze lemon juice over the fruit and sprinkle with coconut sugar. Toss and set aside.

  2. In a large wide bowl, add all french toast ingredients (excluding bread). Whisk together until well combined.

  3. Add your bread into the french toast batter, soaking each side for 1 minute.

  4. Heat a skillet with coconut oil or butter over medium-low heat. Add soaked slices of bread to skillet and cook on each side for 2-3 minutes, until slightly browned. Do this for all french toast slices.

  5. Meanwhile, whisk together tahini, maple syrup, and lemon juice in a small bowl. Set aside.

  6. When french toast is ready, transfer to a plate, top with fruit, and drizzle with lemon tahini dressing.

  7. EAT UP.
