These Rosé Poached Pears drizzled with dark chocolate and sprinkled with pistachios are the perfect healthyish holiday treat!
Peel your pears and place them in a pot on the stovetop. Add rosé, maple syrup, cinnamon sticks, ginger, and cardamom.
Heat over high heat until boiling. Once boiling, reduce heat to medium-low and simmer for 30 minutes. Toss your pears occasionally, to make sure they're cooking evenly.
After 30 minutes, make sure your pears are fork-tender, and then remove the pears from the pot. Transfer them to a rectangular baking pan.
Simmer the remaining wine mixture on medium for 15 minutes or until the liquid has reduced by half.
After 15 minutes, pour the liquid over the pears and let sit for 10 minutes.
Meanwhile heat jcoco 80% Dark Chocolate and coconut oil in a double boiler over medium heat, whisking constantly until the chocolate is melted and smooth.
When ready to serve, drizzle melted chocolate over each pear and sprinkle with chopped pistachios. Serve with whipped cream (optional.)
