Black Bean Soup

  • 1 cup canned black beans, drained and rinsed
  • 1/2 cup spaghetti squash
  • 1/4 cup caramelized onions
  • 1/4 cup roasted tomato
  • 1/2 tsp cumin
  • 1/2 tsp paprika
  • 1/4 lime, juiced
  • 1/2 cup non-dairy milk

Top with

  • 1 tbsp full fat Greek yogurt
  • avocado slices
  • black beans
  • cilantro (optional)


  1. Add all ingredients to a blender, blend on high until very smooth. Season with salt if needed. 

  2. Transfer from blender to a small pot on the stove or a microwave safe bowl. Heat on medium-high heat for a few minutes until warm. 

  3. Top with avocado slices, greek yogurt, black beans, and cilantro (optional).
