Pear Ginger Oatmeal Bake

This Pear Ginger Oatmeal Bake is an easy breakfast for a crowd. Ginger poached pears are set into a moist, flavorful baked oatmeal base!

  • 2 Bosc pears, firm
  • 1 cinnamon stick
  • 2" knob fresh ginger, sliced
  • 2 tbsp butter, plus more for greasing pan
  • 2 c oat milk
  • 2 large eggs
  • 1/3 c maple syrup
  • 1/3 c greek yogurt
  • 1 tsp salt
  • 2 tsp ground ginger
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 2 c Bob's Red Mill Organic Rolled Oats


  1. Preheat oven to 375.

  2. Peel, half and core pears, removing stems and ends. Slice ginger into thin slices.

  3. Grease a 7x11 (or 9x9) inch pan with butter.

  4. Heat a large pot filled with water over medium-high heat. Add cinnamon stick and sliced ginger. Once boiling, add peeled and halved pears. Reduce heat to low and simmer for 10-15 mins. Remove from heat and set aside.

  5. Meanwhile heat oat milk and butter in a small pot over low heat, just until butter is melted.

  6. Add melted butter and milk to a large bowl along with eggs, maple syrup, yogurt, salt, ground ginger, cinnamon and vanilla extract. Whisk until well combined.

  7. Add in Bob's Red Mill Organic Rolled Oats and stir to combine.

  8. Pour mixture into prepared baking dish. Top with poached pears.

  9. Bake at 375 for 35 minutes.

  10. Serve with yogurt, syrup, nut butter, or anything your heart desires!
