White Bean and Shrimp Linguine

  • 1/2 box brown rice spaghetti
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 shallot, diced
  • 1/4 teaspoon red pepper flakes
  • 1 cup crushed tomatoes
  • 1/3 cup white wine
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 pound shrimp, raw and peeled
  • 4 lacinato kale leaves, chopped
  • 1 zucchini, spiralized or julienned
  • 1/2 cup cannellini beans
  • 1 tablespoon parsley, chopped
  • parmesan cheese, grated
  • lemon slices


  1. Fill a large pot with about 3 quarts of water. Bring your water to a boil over high heat. Once boiling, add in noodles and continue to boil for 10-11 minutes. Then take off heat, drain, and set your noodles aside.
  2. Meanwhile heat a large casserole pan or skillet over medium heat. Add in olive oil, minced garlic, and shallot to the pan and sauté for 30 seconds.
  3. Add in red pepper flakes, crushed tomatoes, white wine, salt, and pepper - stir. Continue to heat over medium heat until the liquid reduces by 1/3.
  4. Reduce the heat to med-low and add in your shrimp, chopped kale, and spiralized zucchini. Cook for 3-4 minutes, stirring occasionally.
  5. After 3-4 minutes, add in cannellini beans and reduce the heat to low. Cover and cook for 5 minutes.
  6. After 5 minutes, add in your brown rice noodles and toss until everything is coated in sauce. Cook for another couple of minutes.
  7. Divide your pasta into 2-4 bowls. Top with parsley, parmesan cheese, and lemon slices.
  8. EAT UP.
