Warm Squash-Apple-Pear Kale Salad

  • 4 packed cups kale, stemmed and chopped
  • 1 tablespoon ghee (sub red palm oil or coconut oil)
  • 1 garlic clove, minced
  • 1/8 teaspoon salt
  • dash of pepper
  • 2 tablespoons olive oil
  • 1 cup delicata squash, sliced thin
  • 1/4 sweet onion, sliced thin
  • 1/2 fuji apple, cut into matchsticks
  • 1/2 asian pear, cut into matchsticks
  • 1/4 teaspoon turmeric
  • 1/8 teaspoon paprika
  • salt & pepper, to taste
  • 1 tablespoon pomegranate seeds
  • 1 teaspoon hemp seeds optional
  • 1 teaspoon balsamic vinegar


  1. Preheat oven to 350.
  2. Prep your kale, squash, onion, apple, and pear and set aside.
  3. Add your kale to a large bowl and drizzle 1 tablespoon of ghee over the kale. Sprinkle with 1/8 teaspoon salt and a dash of pepper. Use your hands to massage the kale until it is softened and evenly covered with ghee. (Your hands will be very messy.)
  4. Lay your kale onto a baking sheet and sprinkle minced garlic over the kale. Bake for 10 minutes.
  5. While the kale is baking, heat a pan over medium high heat with 2 tablespoons olive oil. Add in onion and squash. Sauté for 5 minutes, tossing often.
  6. After 5 minutes, add in apple and pear and season with turmeric, paprika, salt and pepper. Reduce heat to medium low and sauté for another 5 minutes.
  7. When your kale is done, top with squash-apple-pear sauté. Sprinkle with pomegranate seeds, hemp seeds, and balsamic vinegar.
  8. EAT UP.
