Ingredients

  • 2 cans black beans, drained and rinsed
  • 2 cups jicima, diced
  • 1 cup red onion, diced
  • 1 cup grape tomatoes, sliced into thin rounds
  • 1 cup celery, sliced thin
  • 1 cup pineapple, diced
  • 2 tablespoons jalapeno, diced
  • 2 cloves garlic
  • 1 orange, juiced
  • 1 lime, juiced
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Serve with:

  • tortilla chips
  • literally anything

Instructions

  1. Slice, dice, and chop all of your ingredients and add them to a large bowl.
  2. Squeeze orange and lime juice over the bowl. Add olive oil, salt and pepper.
  3. Toss until everything is well combined and tasty.
  4. EAT UP.
