  • 2 1/2 cups egg whites
  • 1/2 sweet onion, diced
  • 1 poblano pepper, diced
  • 1 green bell pepper, diced
  • 2 cups kale lacinato, stemmed and chopped
  • 3/4 cup light brie, cubed (sub regular brie)
  • 2 garlic cloves, minced
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

top with:

  • avocado slices
  • salsa verde


  1. Preheat oven to 375.
  2. Heat a large skillet over medium heat. Add olive oil, onion, poblano peppers, green bell peppers, and kale. Sauté for 5 minutes, then add garlic, salt and pepper. Sauté for an additional 2-5 minutes, until the veggies are softened.
  3. Add the veggies to a large non-stick baking pan or cast iron skillet. Pour egg whites over the veggies, and scatter the brie chunks into the frittata.
  4. Bake for 20-25 minutes.
  5. Serve with avocado slices and salsa verde. EAT UP.
