Crispy Orange Tofu ingredients:

  • 1 package of extra firm or high protein tofu
  • 1 TBSP orange zest
  • 1/4 C orange juice
  • 2 TBSP sesame oil
  • 1/2 C liquid aminos (sub soy sauce)
  • 1/3 C coconut nectar (sub honey)
  • 2-4 TBSP corn starch (sub potato starch)

Wrap Ingredients:

  • 6-8 collard green leaves
  • avocado, sliced
  • sprouts
  • sesame seeds
  • Creamy "Peanut" Sauce

  1. Unwrap and drain the tofu, wrap it in a paper towel, put it on a plate with something heavy on top of the tofu. (This will help it drain.) Let it sit like this for 20 minutes.
  2. Preheat the oven to 350 degrees.
  3. Unwrap the tofu, and slice it into strips.
  4. Whisk together the marinade ingredients, except the corn starch.
  5. Dip the tofu strips in the marinade until they are completely covered. Then transfer the strips to a baking sheet lined with parchment paper.
  6. Once all the tofu strips are on the baking sheet, sprinkle the strips with corn starch (I used a strainer to sift the corn starch over the tofu.)
  7. Flip the tofu and cover the other side with corn starch.
  8. Bake the tofu for 30 minutes, flipping halfway through.
  9. While the tofu is baking, blend together your "peanut sauce."
  10. Once the tofu is done, let it cool, before assembling the collard wrap.
  11. Layer the tofu, avocado, sprouts, and sesame seeds on the collard leaf. Then wrap the collard up like a burrito, and NOM SO HARD.
