Key Lime Pie Breakfast Parfait

Key Lime Yogurt

  • 2 cups nonfat greek yogurt
  • 1 ripe avocado
  • 2 limes, juiced
  • 1 teaspoon lime zest
  • 2 tablespoons honey (sub agave nectar or coconut nectar)

Almond Cookie Crumble

  • 1 1/2 cups almond flour
  • 3 tablespoon coconut oil, melted
  • 1/2 teaspoon cinnamon
  • 1 tablespoon coconut sugar
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon vanilla extract

Toppings Mix

  • 1/2 cup macadamia nuts
  • 1/3 cup coconut shreds
  • 1/4 cup pumpkin seeds
  • honey, drizzled (sub agave nectar or coconut nectar)


Key Lime Yogurt

  1. Combine all ingredients in a blender or food processor and blend until smooth.
  2. Set aside in the refrigerator until you are ready to serve.

Almond Cookie Crumble

  1. Preheat your oven to 350.
  2. Mix all almond cookie ingredients together, except the coconut oil. Add the oil and mix until the batter is clumpy.
  3. Then use your hands to form the dough into a ball. Line a cookie sheet with greased parchment paper, and lay down the batter.
  4. Press the batter flat, about 1/4 inch thick. Bake for 12-14 minutes. Allow to cool for 20 minutes, before breaking into pieces.

Parfait Assembly

  1. Break 1/3 cup almond cookie crumble into the bottom of each parfait.
  2. Add 1/2 cup of the key lime yogurt on top of the cookie crumble.
  3. Top with a mix of macadamia nuts, coconut shreds, and pumpkin seeds. Top with honey drizzle.
  4. Eat up!
