Lemon and Berry Chia Seed Pudding

This summery tasting chia seed pudding is easy to prep at night and enjoy in the morning!

Chia Pudding Ingredients

  • 1/4 cup chia seeds
  • 1 cup almond milk (sub soy or skim)
  • 2 tablespoons lemon juice
  • 1/2 teaspoon lemon zest
  • 1/2 tablespoon coconut nectar (sub agave or honey)

Berry Topping Ingredients

  • 2 strawberries, chopped (sub any berry you like!)
  • 1 tablespoon goji berries
  • 1 tablespoon lemon juice
  • 1 teaspoon coconut sugar
  • 1 teaspoon hemp seeds
  • 1 tablespoon coconut flakes, unsweetened


  1. Combine all pudding ingredients in a jar or bowl. Mix well.
  2. Put that jar or bowl in your refrigerator overnight or at least 4-6 hours. Stir the pudding after the first 1-2 hours in the fridge.
  3. To prepare the berry topping, mix all ingredients in a bowl. (For best results, let the berry mixture sit for 20-25 minutes to allow the flavors to combine.)
  4. When you are ready, put your berry topping on top of your chia pudding and DIG IN.
