Pumpkin-Coffee-Almond Banana Ice Cream

  • 3 frozen bananas
  • 1/2 cup pumpkin puree
  • 1/2 cup coconut milk
  • 2 tablespoons almond butter
  • 1 tablespoon coffee grounds
  • 1/2 teaspoon pumpkin spice mix
  • 5-6 medjool dates, pitted


  1. Put all the ingredients into a blender or food processor.
  2. BLEND. Until they are all smooth and combined.
  3. Put the mixture into a freezer safe container, and freeze for at least a couple of hours.
  4. Serve, and thank the heavens that pumpkins exist.
